What does Kōji Europe do?
 
Kōji Europe is an artisanal producer of sauces, dressings and condiments created from the Aspergillus Oryzae mold, known in English as koji (kōji) (Japanese: 麹). Our products are created in the Netherlands using seed Koji spores obtained from Japan.

What is Koji?
 
Preserved foodstuffs based upon Kōji (Aspergillus oryzae) have been a staple of the Japanese diet for at least 2,000 years. In Japan, Kōji is used to make sake (an alcohol), mirin (sweet vinegar), shōchū (an alcohol), awamori (an Okinawan beverage), rice vinegar, soy sauce (flavour enhancer) and miso (flavour enhancer and preservative). Outside Japan, Kōji is also used extensively in China and Korea to ferment and mature various foods.
What makes you different ?
 
We aim to make it easy for consumers to incorporate fermented foods into any diet, whether meat or plant-based. We do this by creating a range of sauces, dressings and condiments that use Koji as their main ingredient. Our products are available now online in kit form and will in the future, be available as ready-to-use products.

Who do you sell your products to?

We sell our products online and via carefully selected high street retailers. We also sell our products direct to restaurants. If you are a consumer, you can buy our products here. If you are a retailer or restaurant, then please get in touch with us via our contact page.
Are your products only meant for vegans and vegetarians?
 
No. Our products can be used as part of any diet whether it is meat or plant-based.
Do you sell Koji spores?
 
No we don’t. We only sell Koji-rice and products which use Koji as their key ingredient.
Would you advise me to buy Koji spores over the Internet?
 
No. We believe that Koji spores should only be obtained from a reputable supplier. That is, you should at least be able to go to visit your supplier and see where and how the spores are grown. We visit our supplier frequently.
Are Kōji Europe ’s products suitable for vegetarians or vegans?
 
Yes, although we do not certify our product kits as such.
What is Amazake?
 
Amazake is a low- or non-alcohol traditional sweet drink made of rice, rice Koji or Sake lees.
What is Shio Koji
 
Shio koji (塩麹, 塩糀) is a natural seasoning used to marinate, tenderize, and enhance the Umami, or richness (one of the five basic tastes), in foods. It’s made of just a few simple ingredients, salt, water and rice Koji.
Where does Kōji Europe deliver to?
